Here’s a lovely water themed recipe for you…
Watercress, Watermelon and Carrot Salad
Serves 4-6 people
250g carrots grated or in matchsticks
1 bunch watercress
1tbs pumpkin seeds toasted
2 slices (approx. 2cm ) of watermelon cut into bite size pieces
6tbs olive oil
2tbs balsamic vinegar
Pinch of salt and pepper
Method:
Mix carrot, watermelon and watercress together
in a bowl. Add seeds and dressing, mix and serve.
